Airwalking can only be done with like ... two machines, and they're both customized (and both share a part ... I wonder if anything with that part can do it??)

Set to full acceleration before race

Fly off the track

Hold either R and right or L and left and spin the control stick in half-circles

You should pass over the checkpoints while doing this -- I'm not sure how to make sure you do -- so the game doesn't realize you cheated, but you can skip like half the track
