I've been trying to get this 3D platformer engine working, but whatever I do, I can't get it to check the right z value (whether or not the player is on the right z to collide with the block).

Could someone help me with this?

i have no idea how you're doing this but ...

... can't you define a virtual depth on the block, relative to its center? if you do that, you can check the player's z coordinate directly to see if it collides with a given block based on the block's claimed depth
