Mickey's Land of Illusion and Legend of Illusion, both Game Gear/Master System games. Admittedly, the latter is extremely easy, but it's fun enough. Sometimes I'll still pull out that game for a good hour of fun. Land of Illusion is harder and is a hardcore platformer. Both of them take the basic platforming concepts and add a Disney feel. Whatever they may be nowadays (wouldn't know as I haven't bought any Disney games in some time), Disney games in the 90's were good. They were from a different era in gaming.
Also, as has been said, Mickey's Racing Adventure. And again echoing someone else, Pluto's puzzles were frustrating... But I wish that games produced today made me want to throw my controller like that. In games in general these days, difficulty is gradually decreasing. I loved Mario Galaxy, andi it's not like I could beat it in a day, but it wasn't anywhere near as challenging as its two predecessors... Though, the trickster comets made up for some of the lost difficulty.
Back on topic... I didn't play it much, but there was this one Batman game I had for SNES that seemed okay.
Edit: Actually, yeah, the Toy Story 2 N64 game was pretty good. Why didn't I think of that one? I was never patient enough to finish it. It would have made more sense to have the save capability on the cartridge rather than requiring a controller pack, and they messed up Woody's eyes in the final boss stage, but those are all minor things. To infinity...
