I believe this may have happened to me: Can a GM save file ever lose data registrations such as variables or accidentally reset them to a value of zero?

No. I believe that a Save State is a Save of the RAM used for the Game at the time, which isn't a very good idea if you want your Save Files to be Forward Compatible.

Also, if you made them have a Save State to their Computer, they could go into that and woohoo! Easy RAM Hacking!

Yes, although not many people know HOW to modify RAM, even if it is saved to a file.
