I can't believe how often what's in a manual is taken as canon over what's in the actual games. (Nowhere in one of the official Mario games is Birdo indicated to be a guy, but Birdo has a clearly female voice in SMA.)

Idk, seems to me that Merry Maggie's gender is intentionally left ambiguous (so that the game doesn't quite "go there"). Going by what it says in-game, I would think, Merry Maggie could be either a very manly woman or a she-male.

The article seems to be about characters that look like girls but are known to be male (except that they screwed up on Birdo).
