It's because the chicken wanted to cross the road, but in reality, chickens do not cross roads, they cross the barn or wherever they live, slaughter houses, etc to get them from point A to point B. I really don't know, but I have a feeling that the person who told me... well... doesn't know the punchline of the joke, does he/she?
