Is this easy to do? Edit 64 games?

Yes, which is comparitively easy.

Of course, the people doing these are awesome at it and, like all skills, you can suck horribly at it.

I was taking some more screenshots last night, I thought the mountain area was nicely done, but this ended up being unintentionally hilarious...

Not for a while. The most you can do is rip the model from the rom, but then you can't import it.

ATLEAST... NOT YET.

There's a VERY simple Mario 64 editor. All it lets you do is alter some objects in Bob Omb Battlefield.
